Hi,

would it be possible to add the option to monitor more than one shelly plug?

I have several (two at the moment) that I would like to monitor.

Perhaps this can be accomplished already ny modifying prometheus, but I do lack the skills to do anything to that.

This would be nice to be able to do. I only have one so I only built in support in the exporter and in the Grafana dashboard for one. If I get another, I may take a stab at it, but for now I have some other priorities.

@geerlingguy would you be able to give me some pointers on where to start, if I was to have a go at implementing it?

I've also only got the one but if I do grab more I might have a go at implementing support for it in a pull request

Just off the top of my head; you could run a second instance of the exporter on a separate port, then add another block of config to the Prometheus config pointing at like shelly-2 and use that 2nd port, then you'd have two sets of data.
