Yes, this might be a good starting point given that Food101 is a fairly straightforward dataset. You can find the old implementation here. The new datasets use a different paradigm, so you won't be able to copy-paste everything. You can follow the instructions listed in #5336.

If you are stuck, feel free to send a PR with what you have and ping me there so I can help you out.

Made some progress and have a first working POC:

Still need to polish few things, check the tests, and so on but I think I understood the main idea behind the new design.
The new design is quite good and the documentation is clear enough, well done to the team. 🎉
