In case they're useful here are my notes for generating an epub:

I used an Ubuntu VM as the base with LXD containers within, but you could skip the container specific steps and just build within the VM.

I've not spent a lot of time on it; I opted to fallback to using Calibre to fix issues with the generated epub instead of digging into what causes the generated epub to fail epubcheck validation checks.
