I want to know what the data retention settings do, any things to be aware of, and how to set a custom period of time beyond what is available in the drop-down.

Thanks for submitting this, @skcrip. I've added an item in our backlog to update the privacy docs and expand on the data retention settings. I don't have an ETA, but we'll reference this issue when we publish.
