The std-widgets material style and the material component set will stay separate. The component set is intended to provide all components with all features and the complete set of api that is defined in the material style guidelines. The material style for the std-widgets instead provide all components that are also available for all other styles with the same api for all styles. If you plan to have an app that looks the same on all platforms with material design, the material component set is the way to go, if your plan it to have an app that adopts to the design the app runs on e.g. fluent on Window and material on Android you should give the std-widgets a try.

After the component set is released, it is planned to polish and bring also the std-widgets material style to the state of the latest material design 3 guidelines.

The material component set does not include any platform specific code. So it can be used on all platforms that are supported by Slint even iOS ;-). If you are asking for a dedicated iOS component set. There is nothing planned yet, but in general that is something that should be possible.
