Related: stac-utils/stactools#120, stac-utils/pystac#280

stac-utils repos should use main as the default branch

This will likely only require changes to the GitHub Action workflow triggers; we should do a sweep of the codebase to change any mention of "master" to "main" before changing this in the settings.
