Replace Unidecode with another ASCII visualization library with MIT license

airbyte-python-cdk has a dependency on Unidecode as found here:

Unidecode is licensed as GPLv2+ which is a strong copyleft license.

I recommend either relicensing airbyte-python-cdk or replacing this dependency.
