The _version field is required on GraphQL/DynamoDB updates and that is not reflected in this documentation. See this thread: aws-amplify/amplify-cli#3237

Hey @jgarciaweb 👋 thanks for raising this! The _version field is unique to Conflict Detection, which is enabled for use with DataStore. When this is enabled it is recommended to use DataStore for CRUDL operations, however I think we can add a callout here with that guidance
