Maintenance: Fix aws-lambda-java-serialization dep bump

Summary

Dependabot tried to bump aws-lambda-java-serialization a minor version - 1.1.2 to 1.1.3 - and it has broken our tests. We should fix the issue into our main branch; this is relevant for both v1 and v2 work. See #1450
