Use HTTP by default for APIs

### Description

HTTP should be the default for APIs, with an option to have Cortex generate certs for HTTPS (i.e. the current functionality).

This will be configured by the `CORTEX_HTTPS=true` flag (any other value will be assumed false).

All examples should be updated to HTTP
