remove lua-language-server PR patch overlay from flake when fixed

While adding lua-language-server lint tests in #2611 it was noted that a bug was preventing --check usage (LuaLS/lua-language-server#2775), so had to add an overlay to our flake.nix. This should be removed when that bug gets fixed.
