Equivalent to huggingface/huggingface_hub#3022 in Python.

Main problem is that expand[]=inferenceProviderMapping do not return the same data structure when getting model info or listing models. We will fix this in ~3 months (?) but in the meantime we want a client compatible with both current and future structure (see huggingface/huggingface_hub#3022 for more details).

TODO:

  • adapt call in @huggingface/inference

CI failing test seems unrelated so PR is ready to be reviewed. This PR introduces a breaking change in the return type of listModels / modelInfo but I do think it's for the best. Once this PR is merged and published, both clients will be compatible with current and future APIs.

Merging it now as failing test seems unrelated
