Supporting multiple MCP servers

To be a true MCP host we actually need to be able to talk to different servers and be the "glue" between them.

For example, support an Apple Notes or Markdown file server, or connect to GitHub to get issues for a daily standup post.

Servers could perhaps be configured via wp-cli.yml or a custom config file. (Stretch goal: provide wp ai connect to add more servers)
