Transition from a single Item index to one index per collection

Current, there's one index for all stac items, stac_items. Consider creating one index per collection as stac-server does. This would also provide a migration path between the two servers (or even allow them to use the same ES instance!)

This likely has some performance benefits, as any collection-level restriction in the query can be pushed down to only query against those indexes.

How do we search across collections - I think you answered this before but I don't remember where?

in the search request to elasticsearch, you list the indexes the search applies to. I can't remember the syntax off-hand, but right now we're basically doing:

client.indexes("*,-collections,-kibana").search(query)

so for collection-specific queries, we'd do something like:

client.indexes(f"{','.join(collections)},-collections,-kibana").search(query)
