feat(kafka): Build kafka-opa-plugin from source

Description

Build kafka-opa-plugin from source.

Tested the image locally since we don't have an integration test for Kafka with OPA yet.

TIP: Running integration tests with a new product image

The image can be built and uploaded to the kind cluster with the following commands:

bake --product <product> --image-version <stackable-image-version>
kind load docker-image <image-tagged-with-the-major-version> --name=<name-of-your-test-cluster>

See the output of bake to retrieve the image tag for <image-tagged-with-the-major-version>.

FYI: I merged the main branch which caused some conflicts because of my PR that introduced custom versions for Kafka, I resolved them.
Your PR looks fine, I did some tests and everything seems to work as expected, thanks!
I just think some commented out lines need to be removed (see suggestions), then we can merge it.
